Que ceux et celles qui ne sont pas encore partis en vacances et qui devront bientôt se mettre en maillot de bain passent leur route! La recette du burger du Nord est une bombe calorique, mais aussi une bombe gustative qui vous donnera envie de le refaire (après une petite sieste digestive par contre!).
L'avantage du burger maison, c'est de mettre exactement ce que l'on veut entre les buns et surtout de pouvoir choisir des produits de qualité. Dans cette optique, pour aller jusqu'au bout, l'idéal est de faire aussi son pain à hamburger! La recette des buns que je vous propose vient du blog le Pétrin, une référence en matière de boulange. Donc quand son auteur annonce avoir trouvé la recette quasi parfaite pour les buns, ça me donne envie d'essayer! A l'occasion d'un week-end chez des amis Lillois, le burger s'est retrouvé à la sauce nordique pour pouvoir profiter des fromages incontournables de la région!
Ingrédients pour 8 buns:
recette du Pétrin adaptée pour 8 pains,
500g de farine
6g de levure de boulanger déshydratée
10g de sel
25g de sucre
200ml d'eau tiède
150ml de lait tiède
1 oeuf
30g de beurre ramolli
1 oeuf pour la dorure, graines de sésame
Ingrédients pour 8 ch'ti garnitures:
pour la béchamel au maroilles,
200g de Maroilles
50 g de beurre
3 cuillères à soupe de farine
500 ml de lait
sel, poivre
pour la garniture:
200g de mimolette
5 tomates (coeur de boeuf c'est encore mieux et dans ce cas n'en prendre que 4 grosses)
laitue iceberg
2 oignons
4 steak hachés (de chez le boucher!!)
Préparez les buns:
Avant de commencer, versez la levure de boulanger dans l'eau tiède et laissez la se réactiver 10 minutes. Dans un saladier, faites une fontaine avec la farine et versez le sel, le sucre puis l'eau et la levure, le lait et l'oeuf battu. Mélangez à la cuillère jusqu'à former une boule de pâte. Transvasez la pâte sur un plan de travail fariné et travaillez la jusqu'à obtenir une pâte un peu collante mais homogène. Incorporez alors le beurre en plusieurs fois en travaillant à chaque fois la pâte pour intégrer complètement le beurre. Pétrissez alors le paton pendant 8 à 10 minutes en farinant généreusement pour obtenir une pâte lisse et qui ne colle plus (là, si vous avez un robot, c'est le moment de l'utiliser! moi c'est le moment où je me dis qu'il faut que je m'achète un robot parce que j'ai mal aux bras!).
Laissez alors la pâte reposer dans un bol légèrement huilé couvert d'un film alimentaire ou d'un torchon propre pendant 1 heures 1/2 à 2 heures pour que la pâte double de volume (vous pouvez aussi la laisser toute une nuit au frigo et dans ce cas je vous conseille fortement l'emploi de film alimentaire pour éviter que le haut de la pâte ne sèche).
Reprenez la pâte gonflée sur le plan de travail fariné et aplatissez la en la malaxant rapidement. Formez alors de petites boules de pâtes de même poids (autour de 120 g pour obtenir les 8 buns) et donnez leur une belle forme ronde. Laissez reposer sous un torchon propre pendant presque 2 heures, les petits pains doivent presque doubler de volume. Lorsqu'ils sont prêts, battez un oeuf entier et badigeonnez vos buns d'oeuf avec un pinceau (voir un sopalin si vous n'avez pas de pinceau, je préfère plutôt qu'à la main ou la dorure est moins uniforme) avant de les saupoudrez de sésame (ou de pavot) et d'un peu de fleur de sel.
Préchauffez le four à 180°C puis enfournez les buns pendant 15 minutes (cette étape est très four-dépendante, les buns doivent être dorés en surface et dessous; évitez qu'ils ne brunissent trop pour ne pas perdre de moelleux!)
Laissez les buns refroidir un peu avant de les coupez en 2 et de les garnir (si vous préparez vos buns à l'avance, coupez les au dernier moment et passez les rapidement sous le grill pour les réchauffer)
Préparez la garniture:
Préparez la béchamel : faites fondre le beurre dans une casserole puis ajoutez la farine et mélangez énergiquement. Laissez cuire quelques minutes en remuant pour que le mélange n'attache pas puis ajoutez un peu de lait (à peine 100ml) en mélangeant sans cesse pour éviter les grumeaux. Une fois le mélange homogène ajoutez petit à petit le Maroilles coupé en morceaux et du lait en continuant de mélanger pour que le fromage fonde et la béchamel reste lisse. Une fois prête, réservez au chaud.
Coupez tomates et oignons en fines rondelles (pour aller au bout du voyage nordique, vous pouvez faire revenir les rondelles d'oignon dans l'huile ou le beurre...!) et faites des copeaux de mimolette.
Faites cuire les steaks selon vos goûts et procédez au montage des burgers:
Demi bun + béchamel + salade + mimolette + steak + mimolette + tomate + oignons + béchamel + demi bun !!
Dégustez avec des frites ou une salade avant d'allez vous reposer de l'effort fourni!

Anyone who hasn't yet been on holiday and will soon have to get into their bathing suit can pass this one by! This recipe for THE burger of the north is a calorie explosion, but it will leave you wanting to make it again (after a little nap to let it go down though!)
The advantage of making burgers at home is that you can put exactly what you want on them - specifically you can choose good produce for them. To make the most of this, ideally you could make your own burger buns! The recipe that I'm recommending is from Pétrin's blog - a good reference point if you're interesting in bread-baking. So, when she announced that she had found an almost perfect recipe for burger buns, I immediately wanted to try it out! Visiting friends in Lille for the weekend, I matched the burger with a nordic sauce and made the best use of the unforgettable cheeses of the region!
Ingredients for 8 buns:
(Pétrin's recipe, adapted for 8 buns)
500g flour
6g dried baker's yeast
10g salt
25g sugar
200ml lukewarm water
150ml lukewarm milk
1 egg
30g softened butter
1 egg (for egg wash) sesame seeds
Ingredients for 8 ch'ti burgers plus toppings:
for the Maroilles cheese béchamel sauce
200g Maroilles cheese (or if you can't find it another strong cheese as a blue cheese)
50g butter
5 soup spoons of flour
salt + pepper
for the toppings:
200g mimolette cheese (it's a quite strong french cheese, characterized by it's beautiful orange colour , I used it as I was in the North of France but you can use another "pate préssée" cheese)
5 tomatoes (beef tomatoes are even better, if you can get hold of these you will only need four large ones)
2 onions
4 burgers or steaks (preferably from the butcher!)
To make the buns:
Before you start, add the yeast to the lukewarm water and let it prove for 10 minutes. In a salad bowl, make a well in the flour and put first the salt and sugar, then the water and yeast, the milk and the beaten egg in. Stir everything together until a ball of dough forms. Place the dough onto a floured work surface and knead it until a sticky but even dough is formed. Add the butter a little at a time, kneading the dough at each addition so that the butter is fully incorporated. Knead the dough for 8-10 minutes, flouring generously so that the dough becomes smooth and no longer sticks (at this point if you have a mixer I would suggest that you use it! Now is the point when I say to myself that I should get one for myself because my arms hurt!)
Put the dough in a lightly greased bow and cover with clingfilm or clean cloth. Leave to rise for 1 1/2 to 2 hours or until the dough has doubled in size (you could also leave the dough to rise overnight in the fridge - if you do this I would strongly advise that you cover the bowl with clingfilm to prevent the top of the dough drying out).
Place the risen dough onto the floured work surface and beat it down*. From the dough form balls of around the same weight (roughly 120g for 8 buns) and shape them into round buns. Allow these to rest under a clean cloth for 2 hours - the buns should almost double in size during this time. When they are ready, beat the remaining egg and brush the bun tops with a pastry brush (use kitchen roll if you don't have a pastry brush, I prefer to do this rather than do it by hand as the result is more even) before sprinkling them with sesame (or poppy) seeds and a bit of sea salt.
Preheat the oven to 180 degrees centigrade then cook the buns for 15 minutes (this stage depends very much on your oven, the buns should be golden on the top and bottom - don't let them get too dark or they will lose some of their softness!)
Take the buns out of the oven and let them cool a little before slicing them in half ready to be filled (if you have made the buns in advance, slice them at the last minute and quickly put them under the grill to reheat).
To make the filling:
To make the béchamel:
Melt the butter in a saucepan, then add the flour and stir quickly. Cook for a few minutes, stirring so that the sauce doesn't stick, then add a small amount of milk (100ml at the most), stirring continuously to avoid lumps. Once the mixture is combined and smooth, add the cubed Maroilles cheese and the milk a little at a time, still stirring so that the cheese melts and the sauce stays smooth. Once the sauce is ready, keep it warm.
Thinly slice tomatoes and onions (for the full northern experience you could brown the onion slices in oil or butter!) and cut shavings of the mimolette. Cook the steaks/burgers to your liking and then build up the burgers in the following manner:
Bottom half of the bun + béchamel sauce + salad + mimolette + steak/burger + more mimolette + tomatoes + onions + more béchamel + the top half of the bun!
Enjoy with chips/fries (depending on your location!) or a salad before rewarding yourself for the effort expended with a nice rest!
